If the mouse pointer is moving then it's not Xorg that has frozen.
Because Xorg moves the mouse pointer. It sounds like only your shell has
frozen.

you're not actually using nouveau (the X driver), the error is from the
kernel.. and since it's buggy, the later kernels have disabled nouveau
modeset by default, so this shouldn't happen with 5.0.0-11 and up...
