I've searched around, but haven't found an acceptable case that will
house the 7" touchscreen. I have 3 shields (Screen controller, Raspberry
pi, HiFiBerry DAC) so I need about 2" (50mm) depth at a minimum.

That's just what I'm looking for.
But, you weren't kidding that it's pricey. I'll keep this in mind if I
can't find anything else, or maybe I'll see if I can slap something
together myself.
