That is bracket completion and can be turned off separately to autocomplete.

I add a quote (or bracket at the end of a bracketed expression) at the end of a
string.

turn off Autocomplete. There was an option to use F1 to disable but I don't

I am having a problem with Autocomplete.
It keeps interfering with what I’m trying to type,
and I find it to be very annoying.
I’m trying to turn the feature off in the Preferences
under Script Editor and have unchecked the
Auto Format box and that seems to have no
effect
