That is bracket completion and can be turned off separately to autocomplete.

I add a quote (or bracket at the end of a bracketed expression) at the end of a
string.

I’m wondering how it is interfering with what you are trying to type. Can you
provide an example. It shouldn’t do so unless you tab to complete. It could be
that as

turn off Autocomplete. There was an option to use F1 to disable but I don't
