Take a look at this example where the displaytag table at the bottom of the page shows you just type it in there: http://demo.appfuse.org/appfuse/demos/users-edit.jsp In case you were wondering, I used the words "displaytag editable table" in a search engine to find the page (but yes, I had a head start because I knew that kind of example existed somewhere as I'd seen it posted here before).
If displaytag doesn't fit for you then try ValueList, also at SourceForge.
