The original syntax uses %% to close the style section.

Probably something is wrong with your deployment. Apart from
jspwiki.templateDir=haddock, you should not change anything else.
Check if the "haddock.css" file can be found.
(sometimes clearing cookies could be helpful as well)

The WYSIWYG issue you see is related with a feature added to the PLAIN
editor to recover unsaved edited pages.
(unsaved content is cached in the browser until the next time you come back)

The trail dropdown menu is automatically shown at the top left of the
navigation bar when you have at least one item in the recently visited
pages stack.
So, visit a few pages, and you will see the trail menu appearing.

You'll see a RENAME and DELETE button, only if you have the access-rights

Typically you should be logged in to be able to rename a page.
