Why LibreO should change that I don't know.
Does it default to the Last Printer Used by LibreO?

I only have the one printer in Snow Leopard, but I think you problem lies
with System X rather than LibreO.
Way back I changed printers and I had to remove the old printer before the
new printer became the real Default.
That was in the days of Panther though.

Second thoughts.
Are you using the Apple Printer Driver, or the one supplied by the printer
Manufacturer?
My preference is for the Apple drivers, especially with Epson printers.

Try System Preferences Print Fax, then remove any printers not in use.
Also, if you go into LO Preferences General and see if under Print Dialog,
Use Libre Office Dialogs is checked.
This gives you the option of using the LO Print menus, or Unchecked, the
System X Print menus.
