Is there a way to darken up underscores so I can easily
see them on an LCD monitor?

It may be a variant of https://github.com/geany/geany/issues/2287
which has a workaround, but other wise the only way of changing
appearance of characters is to change the font you use, these are
system things and not something Geany does.
