When zooming in the documents, you can get thrown around anywhere in the
document. Using multiple page view.
It should zoom in or out dependant on where I want, but it very bugged at this
stage.

Font sizes are managed by using Paragraph Styles.
If this is easy depends much on the capabilities of the sender.
The readability is controlled by the zooming factor, you can use the zoom
slider at the right - bottom corner

How can I increase fonts and keep readability of the sheet? Do I also
have to increase vertical & horizontal size of the rows and columns? Is
there a way to do this globally?

you can change zooming in view menu in to your desire.
i think that it should be the last option in view menu.
just press alt+v to activate view menu and find and select your desire.

I've had the zooming problem before, too, but only with LyX, not OO. I've
noticed it happens when I drag my finger along the touchpad in just the
right direction at just the right place. But, I've had a very hard time
trying to duplicate it, and for whatever reason, it hasn't happened to me

You said It happens with other programs too. That indicates it is a setting on your computer,
not an OpenOffice problem.
I have the same problem. It used to be much worse, but I found a
setting in the mouse/touchpad driver that disables the touchpad whenever
another pointing device is plugged in. After bootup is complete, I now
get a message on my desktop that the touchpad has been disabled.
