Hello I finally found the issue : I forgot to say I have a static route to ovirt configured on the hosts (it's not the default route)
The issue was that when I added the static route using static-route.yml + nmstatectl (https://ovirt.org/documentation/administration_guide/index.html#proc-Adding-a-static-route-on-a-host), the route did not match the main table-id and the packets did not take the route.
