Generally speaking, you should follow the hosted-engine backup and restore flows/documents. I strongly suggest to test this first on a test machine before production. You can take a backup without downtime. Restore on some machine (can be a VM, with nested-kvm) that has no access to your production storage and hosts (to make sure the restored engine won't start managing them/competing with the production one). See that all looks good. Then plan production...
