I initially installed an AllinOne oVirt installation, but realised half way
through that I actually need a self-hosted-engine instead, so I did an
engine-cleanup and removed the database etc then ran...
yum install ovirt-hosted-engine-setup
hosted-engine --deploy

I've gone through the oVirt admin front end as a test and I see I've been
able to add the host to the Default datacenter manually. Not sure if
perhaps this worked manually because it used root and I specified the
password perhaps instead?
Would be interesting to find out why this failed
Sorry to be replying to my own post, but I'm not sure if by adding the Host
manually that I've perhaps messed up something now?
How do I go about adding my default NFS storage domain because no storage
domain exists currently despite my hosted_engine being a VM already running
on my default

hosted-engine-setup was indeed doing something more on the HA side.
I suggest to clean-up and try
