I have noticed a problem where a users Calendars stop syncing. They
'seem' to be working - ie, you can see old events etc, but new ones
don't show up, and changes made by others don't show up.
Normally I would reset the calendar cache, but in these new instances,

You need to enable relay (perhaps authenticated) on your SOGo server,
and configure that in thunderbird.

This will work only from your local network … e.g. if you are connecting to
your mail server
I settled for the mynetworks fix and no authentication on the TB side.
I'll continue implementing SASL authentication in Dovecot because most
of the pieces are already in place. The mail server is working well
with only an autocreate plugin is deprecated, use mailbox setting error.

4 yet.
Samba 4 comes in as a dependency with SOGo, is it safe to block samba 4
(in the meaning of SOGo still runs fine)?

You need samba4 only as an authentication source (if you have no other), sogo
itself does not depend on it. On the other hand, you can have your shares
served with samba4 too, replacing samba3 altogether.

When opening mail app on iOS the device is doing a sync. This lasts more than
60 seconds. I can't see anything in the logs, neither with tcpdump. Seems that
the iOS is waiting on something.
What I realized as well is that after deleting a mail in the web frontend it

Unless you are planning to install SOGo on one of your existing Samba3
