The platform WAR is not meant to be executed as is. You need to configure it before using it. This involves modifying xwiki.cfg and hibernate.cfg.xml as you've discovered. If what you want is a working application directly from the build you need to build one of the products. You're probably looking for XWiki Enterprise. Check the SourceRepository page on xwiki.org in the community space to know what to check out and the Building page there to understand what to build.
