If you're willing, you can open the file with an archive editor (it's a simple zip file), and edit the information in the meta.xml file inside it. If I create a document, then export to PDF, the author is set to the user info as defined in the OptionsUser Data section. In FileProperties, I can deselect Apply user data and the author info will no longer be exported to a PDF. However, if I subsequently change the OptionsUser Data information, the new information will not be exported to PDF, even if a reapply the FilePropertiesApply user data. I think I was resetting the user data without having the checkbox checked (which, of course, doesn't make any sense, so I'm not sure why I was doing it that way!). Works now. Much happier.
