I'm using

xwiki.defaultskin=toucan
xwiki.defaultbaseskin=albatross

But it seems that the templates and different from the ones in a stock
install - seems they had the wrong permissions and were not
overwritten on redeploy ... I'll check and confirm if this solves it.

Yes, we've imported the XAR, excluding the files listed at

http://platform.xwiki.org/xwiki/bin/view/AdminGuide/Installation#HUpgradingwikidocuments

It's worth noting that we've kept the front page we've previously
changed, and not imported the default one.
