Why not build with ninja? E.g. gyp_generator like you specified and then
build with:
ninja -C out\Release
on x64 platforms might require:

In short the steps that i've been attempting are as follows
- set DEPOT_TOOLS_WIN_TOOLCHAIN=0
- set GYP_MSVS_VERSION=2015
- set GYP_GENERATORS
