Fixed! I have no idea why, but somehow Exim had jumped on to my box. I certainly haven't installed manually but perhaps something had it as a dependancy when I installed something else or maybe did a "yum update".
Anyway - now that I've uninstalled Exim, everything is working OK. No wonder my qmail config files didn't seem to be working! Nick...
