I just tried youTube for the first time, messing around... and it apparently re-formatted the video... and it lost more than HALF of the quality. yuck...
A work around is to upload a higher resolution files to video hosts that convert before posting.

I've experimented with Flash video and I know it doesn't have to
look that bad. I think they do it like that to save on bitrate.
One advantage that flash has is that it's a pretty universal format.
