I BELIEVE it is actually steamed (or perhaps that's just how they
store it).  Usually you eat the smoked meat in a sandwich made of rye
bread and mustard.

What kind of wood do they burn to smoke it with? 

In Missouri we call smoked meat Bar-B-Que, which is pork, beef, or 
lamb smoked in Hickory, Apple, Cherry and or Maple wood. I prefer 
pork shoulder or ribs myself with Kansas City or Memphis style 
sauce. St. Louis sauce is little better than ketchup.

Well, I had a good week so I kicked in some cash, mainly cuz I don't
want Marcus to shave his beard if he doesn't have to. What can I tell
ya, I like beards.  

And if I happen to be the one to send it over I would like (instead of
the beer) a regional soda/pop that Canadians drink like water (again,
this does not mean beer).
