CamStudio is not bad either and no watermark http://camstudio.org
Given all the answers I've gotten telling me what I should use instead
of the program I've been trying to use for a week, should I just
conclude that Windows Media Encoder just doesn't work? I'm trying to
not have to re-do (again) all the screen capturing I did last week!

I'm diving into this cold (after a long absence from the list), but did
you tell us what size 640x480, etc. the screen capture was done at?
Also what are the specs on your PC? Could it be a little underpowered?
You could also try transcoding your captures down to a lower frame
