Click on the title under "Downloaded" and when you get to the screen with the parts of the book (even if it is only one part), swipe your finger from left to right on the title, tap the "remove from device" button, and a message will pop up asking you if you are sure you want to remove from device. I've just found out how important this is! I was about out of storage space on my iPhone and this was the reason. Of course, you can still access from your iCloud.
