If you choose to sync your contacts with iCloud, they will be copied to iCloud,
not deleted from your phone.

All iCloud does is sync whatever you have on your iPhone to a server
hosted by Apple. So long as contacts is turned on in settings

iCloud backs up all your contacts, so that if you ever need to erase all the
data on your phone, you can get it back by restoring the latest iCloud backup.
However, if you delete a single contact from your phone, it will also be
deleted from iCloud.
