I know that when I get a reminder I can snooze it for 15 minutes by opening the
options and selecting that out of the list, but I can't choose how long to
snooze it for.

You can set how often a text or iMessage alert repeats in Notification
Centre, Messages, but no such customization exists for other notifications.
