I am using the default Samantha voice and she mispronounces Holiday Inn also.
As you said, it is particular phrases, not just the word holiday. For a long
time, when she would see "Arizona Cardinals"

proof reading my reply, she pronounces the word
As I am reading your email message, the phrase “The Holiday Inn” is pronounced
perfectly.
You might consider changing the voice because the problem may lie in that
software rather than VoiceOver per se.
