I'm curious about how iTunes manages uninstalled apps. I know the apps are
kept under a folder named Mobile Applications. I'm curious why one of the
apps I deleted from my phone still shows up in this folder after a sync
between iTunes and my phone. I would have thought it would be removed.

Yes, go to the apps radial button whilst the iDevice is connected and check the
apps you want on the device. Sync causes all checked apps to be placed on the
device and all unchecked apps to be removed. It is really straightforward.
