It sounds like the item chooser is the way to go.

bar and typing the text I wanted to search for, I single finger swiped right
through a list of web pages until I reached a heading t
Try double tapping in the address bar with one finger, clear the text that is
there, then type the word you want to find on that page.
Do not double tap the search button, but instead flick right with one finger,
you will find an option to find on page, or it may do it automatically. Either

first thing there is a search field. You use the scrub gesture to get out of it.
