If you subscribe to iTunes Match, how do you easily tell which songs were
replaced and which were not? Do you have to go into 'Get Info' on each one
to see if the additional tags have been added or what? Thanks.

iTunes doesn't change any tracks in the library on your computer. It just makes
those tracks available for download by all your devices. So if you have an
album that you know was ripped at a low bitrate, and you know that the album
was matched with tracks in the iTunes store, you can
