Yes, you can absolutely send stickers in iMessages. Not all stickers are accessible, or have labeled images though. Some time ago I downloaded some stickers from the American Printing House called Braille Badges, and were a collection of blindness related stickers, such as saying different words

You should be able to use the apps for the individual transportation companies, such as an airline or bus line, depending on what you have in your area. Certainly some apps will work better than others. I've used Booking.com before and that works fairly well with VoiceOver, though it can be tricky
