If I do a factory reset what exactly getts lost in the proccess? Does
VoiceOver get turned off? I assume I loose my folders, but not my apps?

Yes. This happened to me today while typing a text message with my Braille
display. I posted about this a week or two ago and someone said it had
something to do with battery life, but both my phone and my Pronto notetaker
were fully charged at the time. The first time this occurred was before
