The way you would restore from a backup is to erase everything on your phone by
going to Settings/General/Reset/Erase all content and Settings. As part of

If you tab through the options in iTunes there is one spot where it will tell
you when the last backup was done, i.e. it will give you the date and time.
Also, you could additionally do an iCloud backup in Settings > Y
