I don't think Google Assistant can connect to Apple Music, but I am not 100% sure. Alexa definitely can and while we have several Google speakers around the house, all our Sonos speakers are set up with Alexa because we like the fact that we can then play Audible books as well as use our Apple Music subscription. You can always call Sonos support at 800-680-2345 to find out.
