Go to settings, Accessibility, Touch, and the last item is BackTap.
You can turn it on, then define two gestures: a double backtap, and a triple
backtap.

I updated my 1st generation iPhone SE to 14.1 and the Siri volume did not
change.
I guess I was lucky.

Get Siri talking and start tapping the up volume to get it back to the volume
you want.
