I don't turn speech off when I record using voice memos. It is not necessary
unless I suppose you are expecting a call or something like that. It has
never happened that I got a call or some other alert when I was recording

Just FYI, here is what it says if you get into Help mode with a 4-finger triple
tap and then do a 2-finger double tap:
2-finger double tap - start and stop the current action. For example:
Answers and hangs up a telephone call
Starts and stops playback of music and video
