You can always just push and hold the home button or the middle button on the 
microphone as long as you are dictating, then SIRI will not think you are done.

Siri) gives me long enough and at least I can stop and start. I only use Siri 
for the very short messages but certainly don't find him flexible enough.

I find I can only dictate a few sentences and then Siri buts in with
