They neglect the fact that as electrons are removed, positive charges remain
behind, which leads to a space charge, so
that the gravitational field is not the only field that "evaporating" electrons
have to overcome.
They also miss the fact that stars are continually spewing thin plasma into
space, as evident from our own "Solar wind".
This means that rather than being full of electrons, space is actually filled
by a cold plasma that is net neutral, but
where nevertheless a form of crystal does form. However it's comprised of both
protons and electrons, and looks more
like a low density salt crystal (NaCl).
