When I was looking at the Thunderbird add-ons (needed a calendar -
Lightning, works perfectly), I had found 'Signature Switch' and read it
up. It also does what I want to do, having multiple signatures and
selecting which one I want to use based on what I am doing.

I've never used Thunderbird, always Apple Mail ; but have changed quite a few
clients to using Apple Mail.app over the years.
