Unfortunately I can’t be of much help as I’ve never used Pages on iPad.
Others who do use Pages on iPad should be able to help you more.
But as a starter you might find Apple’s “Pages help for iPad” of some help.

Pages in iOS

[Severin Crisp]

I have copied and pasted a large block of text and it now seems to behave as if 
it is a single block or graphic. How do I make it just text?
