It would be fairly easy to do with a single regular expression. Basically assuming every site link follows the enwiki URL schema (which it does, but ...). The right way to do it would be to iterate all of [[w:d:Special:Interwiki]]. We do have mw.config.get( 'wbSiteDetails' ) and could try to iterate it and use it to parse what the user entered.
