I load my 5 gig UBNT APS with 45 clients on a 10 meg channel and they all are able to pull between 18 and 24 megs down at all times. I do not think you have anything to worry about even on a 5 meg channel. Unfortunately you asked a question that doesn't have a great solid answer. You're going to need to monitor throughput usage on the sector to really answer that question for you. However, with that said, you can probably get upwards of 30-50 on a sector without issue.
