It seems that whenever I try to fix a problem in Mozilla, then IE breaks.
There's a very good reason for that... Because you are using the xml prolog,

and

I'm betting that if you remove
the xml prolog, IE will start breaking too.

and many more..

 "XML declaration" is the correct name of the entity referred to..

XHTML always has a prolog -- the DTD, which is required. You can't leave it out and still have a conforming XHTML document.
