I may be a dunce on this one, but where is the true symbolism of Jesus' 
lifeblood being crushed out of him and him being bruised for our iniquities 
with the current use of water in our Sacrament?  With grape juice we'd have 
the proper symbolism, but I fail to see the proper symbolism represented 
with water.  I'm not criticizing our use of water but only trying to 
understand.
