It won't boot at all if there's something mounted inside the zone.

Use 'zonecfg' instead.

What bad things would happen if I add an entry to my global zone's
vfstab to mount a filesystem into a local zone's root (for ex,
/zones/myzone/root/logs)?   Would the zone still boot up and shut down
cleanly? thanks
