The 'manage_owner' tab is only really important for "executable" content (PythonScripts, DTMLMethods, PageTemplates) which live in the ZODB. "Normal" content doesn't check or depend on that feature. You should be fine with using Plone's "Sharing" tab to adjust the "content" ownership for the former user's files.
