I see you don't run a local name server, so why do you
expect a dumb Windows box to be able to resolve an alias
such as "jochen.wa-p.off"?

Not related to your masquerading problems, but why the double route
in lines two and three?

But do you have defined your LAN hosts in /etc/hosts?

More details are necessary about the network settings of your
NT boxes and the IP masquerading and firewall rules of your
Linux router/gateway.
