I'm running a dual boot as you describe. Here's what I did: Install Win2K first. During Win2K install I partitioned my drive to use 50% of the available space as a FAT32 partition.
When that was finished, I installed RH 7.1. I chose to manually partition the drive, creating a swap partition, and the remaining free space as root (/). I also created a mount point for my FAT32 partition as /windows. After the RH install, I have the ability to dual boot either OS. While working in Linux, I can work with files on my FAT32 drive. The partition (/windows) shows up as just another folder in the file manager utilities.
