Detecting a sniffer isn't easy, fortunately protecting yourself from one is. The main thing to remember is to use encrypted protocols as much as possible. For http traffic you can encrypt the connection with ssl. (just like sites do with e-commerce eg. https://) If you set it up right, you can also tunnel pop3 and ftp over ssl as well.
Stay away from plain text protocols, for example, any protocol that transmits passwords over plain text, like ftp and pop3 and telnet. For your e-mail, PGP would certainly do the trick but you may just want to set up a remote shell and forward your mail there, then use ssh to log in and check your e-mail.
