You've asked the worst Linux question possible. :)

It's all based on preference. Everyone has their own personal favorite.
For ease, RedHat and Mandrake (better IMO, based on RedHat) are probably
what you'd want.  However, I'd suggest that you look into Slackware,
Openwall, and Debian.  They're regarded as the best for most servers that
I've seen (RedHat aside due to publicity).

Basically, download some ISOs and put them on test machines, see which you
like.
