 This is likely a trivial task:
 
 Windows: cain
 Linux: tcpdump, + others
 
 You're better off examining ssh solutions. <opinion> Have a look at a 
Smoothwall solution and/or LTSP, putting everyone on a (linux) thin client 
<bg>.
