You can see on http://dave.cridland.net/cacti (xmpp/xmpp) what proportion of server connections use TLS on my server, but I'm not sure most servers actually collect statistics like this. In my case, I talk over an average of 37 s2s links at any time, of which an average of 14 are privacy protected using TLS. This isn't, I admit, very representative, as you can guess by the client numbers.

From my observations, the majority of servers that don't offer or use TLS on s2s are actually not using XMPP at all over s2s links, but the older Jabber protocols - ie, no version number, no features, and therefore no TLS.

Incidentally, this is just "using TLS", and doesn't mean "authenticated by X.509 strong auth" - most of these still use dialback to authenticate.
